For over five centuries, the central stem of the maguey plant has been used to produce the local firewater known as Raicilla. Pre-dating Hispanic history, the spirit is thought to be Mexico’s best-kept secret. The central stem of the agave plant is mashed and roasted, similar to mezcal, and single-distilled in copper pots, resulting in a sweetly vegetal taste. Shared between locals for generations, it is known to have euphoric properties.
